Provencal Green Beans and Potatoes Stew

Ingredients

  • 14 cup extra virgin olive oil
  • 1 large sweet onion
  • diced
  • 3 garlic cloves
  • minced
  • 2 teaspoons fresh rosemary
  • chopped
  • 1 (14 ounce) canpetite diced tomatoes
  • 1 lb frozen cut green beans
  • 23 lb golden potato
  • peeled and diced (1/2 inch)
  • 1 teaspoon salt
  • 14 teaspoon fresh ground black pepper
  • 12 teaspoon herbes de provence

Instructions

  1. Heat oil over medium-high heat, add onions & salt.
  2. Cook until starting to brown (15-18 minutes).
  3. Add garlic, herbes de provence, salt and pepper.
  4. Cook for 1 minute.
  5. Add tomatoes, green beans and potatoes.
  6. Cover and bring to a simmer.
  7. Simmer gently until veggies are soft, 25-30 minutes.
