Ingredients
- two 14 oz. cans chickpeas
- drained and rinsed
- four cups (or more) diced fresh tomato
- 1/2 cup finely chopped red onion
- two cloves garlic
- minced
- 1/4 cup chopped cilantro
- two diced avocados
- lime juice
- salt and pepper
Instructions
- Mix together chickpeas, tomatoes, onion, garlic, and cilantro until well combined.
- Gently mix in avocado.
- Squeeze lime juice over the salad and add salt and pepper.
- Mix again and taste, and add more lime, salt, and pepper as needed.
