Potatoes With Warm Bacon Vinaigrette

Ingredients

  • 3 lbs potatoes
  • peeled and cut in 1 inch cubes
  • 6 slices bacon
  • chopped
  • 12 cup sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon Dijon mustard
  • 1 teaspoon celery seed
  • 12 cup cider vinegar
  • 1 14 cups water

Instructions

  1. Boil potatoes until tender.
  2. Drain and set aside.
  3. In large skillet, cook bacon until crispy.
  4. Set aside.
  5. In small bowl, mix rest of the ingredients.
  6. Mix all in bacon drippings.
  7. Cook and stir over medium heat until mix comes to a boil.
  8. Stir until thickens slightly.
  9. Add bacon.
  10. Put potatoes in serving bowl.
  11. Add dressing and toss lightly to coat.
  12. ENJOY!
