Ingredients
- 2 tablespoons vegetable oil
- 2 tablespoons butter
- 12 cup onion
- peeled and chopped
- 12 cup ham
- diced
- 1 (24 ounce) package frozen hash browns
- thawed and drained
- 12 teaspoon salt (or to taste)
- 12 teaspoon pepper
Instructions
- Heat oil and butter in a large skillet; add onion and ham.
- Saute two minutes; put potatoes on top of mixture, making a large pancake.
- Season and cover.
- Cook slowly until golden on bottom.
- To turn, slide pancake onto a large plate.
- Add more oil and butter to skillet if needed.
- Invert pancake into skillet and cook until golden, about 15 minutes.
- To serve, cut into pie-shaped wedges.
