Ingredients
- 1 12 cups Simply Potatoes Traditional Mashed Potatoes
- 12 cup canned diced green chiles
- 1 12 cups Mexican blend cheese
- shredded
- 2 large eggs
- 4 cups tortilla chips
Instructions
- Preheat the oven to 350 degrees F. Spoon half of the potatoes into a small casserole or souffle dish.
- Sprinkle with half of the chiles & half of the cheese.
- Spoon remaining potatoes over cheese & sprinkle with remaining chiles.
- In a small bowl beat the eggs until pale yellow in color.
- Pour over chiles & bake for 10-15 minutes or until eggs are set.
- Sprinkle with remaining cheese & bake for an additional 5 minutes or until cheese is melted & dip is heated through.
- Serve with tortilla chips for dipping.
