Ingredients
- 1-1/2 gal. tomatoes
- thinly sliced King Soopers 1 lb For $0.99 thru 02/09", "1-1/2 qt. red onions, thinly sliced", "2 cups KRAFT Signature Sun Dried Tomato Oregano Dressing", "24 each baked potatoes Safeway 2 pkg For $5.00 thru 02/09", "3/4 cup olive oil", "1-1/2 cups crumbled feta cheese", "3 cups fresh basil leaves
Instructions
- Marinate tomatoes and onions in dressing at least 1 hour.
- Cut potatoes in half; scoop out flesh into large bowl, then mash.
- Discard peels.
- Shape potatoes into 96 patties (or into 16 patties for trial recipe), using 1/4 cup for each patty.
- Add patties, in batches, to hot oil in skillet; cook 3 min.
- on each side or until golden brown on both sides.
- Remove from skillet; keep warm.
- For each serving: Place 2 potato cakes on serving plate; top with 2/3 cup of the tomato mixture, 1-1/2 tsp.
- cheese and 1 Tbsp.
- basil.
