Potato Asparagus Soup Recipe

Ingredients

• 10 1/2 ounce. can cut asparagus
• 1 teaspoon butter
• 1 teaspoon instant chicken bouillon
• 1 c. half & half
• Dash of pepper
• 1/3 c. onion
• minced
• 1 c. water
• 3/4 c. instant mashed potatoes
• 1 teaspoon fresh dill
• minced

Instructions

1. Drain asparagus, reserving liquid.
2. In medium saucepan, saute/fry onion in butter till tender.
3. Add in asparagus juice, water and chicken bouillon.
4. Bring to a boil; reduce heat and simmer 5 min.
5. Remove from heat, stir in potato flakes till blended.
6. Add in asparagus, half & half, dill and pepper.
7. Return to heat; heat thoroughly.
8. Garnish with fresh dill.
9. Serves 3.
