Ingredients
- 3 c. warm mashed potatoes
- 1 pkg. (3 ounce.) cream cheese
- softened
- 1/4 c. lowfat milk
- 1 egg
- 2 tbsp. butter
- 1 can (2.8 ounce.) Drukee French fried onions
- 2 Packages frzn broccoli spears
- cooked and liquid removed
- 1 c. shredded American cheese (or possibly cheddar)
Instructions
- Whip together first 5 ingredients till smooth.
- Season to taste with salt and pepper.
- Mix in 1/2 can of onions.
- Spread potato mix over the bottom and up sides of a buttered casserole dish to create a shell.
- Bake uncovered at 350 degrees for 25 to 30 min.
- Arrange broccoli spears in potato shell; sprinkle with cheese and remaining onions.
- Bake uncovered 5 min longer.
- Makes 8 servings.
