Pork & Pineapple Baked Medallions

Ingredients

  • 1 cup Low Sodium Vegetable Stock
  • 8 ounces
  • weight Sliced Baked Pork Loin Cut Into Medallions
  • 1 teaspoon Maple Syrup
  • 1 Tablespoon Brown Sugar
  • 1 cup Pineapple Chunks With Natural Juices

Instructions

  1. Preheat oven to 375 degrees F.
  2. Add vegetable stock to a nonstick baking dish.
  3. In a mixing bowl, add sliced baked pork medallions, maple syrup and brown sugar.
  4. Stir gently to coat.
  5. Add pineapples and juices.
  6. Transfer into the baking dish, cover with aluminum foil and bake 30 minutes.
  7. Remove foil an bake an additional 5 minutes.
  8. Serve with baked sweet potatoes and side salad.
