Ingredients
- 4 cloves Garlic
- Divided
- 2 Tablespoons Fresh Rosemary
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 3 Tablespoons Olive Oil
- Divided
- 3 pounds Pork Loin
- 23 cups White Wine
- 4 leaves Fresh Sage
- 2 cans White Beans
- 15 Oz. Cans
- 1 can Chopped Or Diced Tomatoes
- 14.5 Oz.
Instructions
- 1.
- Preheat oven to 325 degrees F. Coat a roasting pan with cooking spray or line with foil and spray.
- 2.
- Chop two of the garlic cloves and mix with the rosemary, salt and pepper.
- 3.
- Rub pork with 2 tablespoons of olive oil and season with the garlic/rosemary mix.
- 4.
- Place pork in roasting pan, pour wine around the pork and roast in 325 degree F oven for 1-1 1/2 hours.
- 5.
- Slice remaining two cloves of garlic and saute in 1 tablespoon of olive oil with the sage leaves until garlic is softened.
- Stir in beans and tomatoes.
- Bring to a boil and then lower heat and keep warm until pork reaches the 1 hour point.

- Pour bean and tomato mixture around pork and roast for an additional 20 minutes or until meat is tender and juices run clear.
