Ingredients
- 1/2 shallot
- thinly sliced
- 3 tbsp cider vinegar
- 1/4 cup pomegranate juice
- 2 tbsp whole grain mustard
- 3 tbsp honey
- 3/4 cup canola oil
- 1/4 to 1/2 teaspoon salt
- 1 pinch white or black pepper
Instructions
- In a small bowl, marinate the shallot in the cider vinegar for at least 5 minutes.
- In a food processor, combine the pomegranate juice, mustard, honey, shallot, cider vinegar, and oil.
- Process until thoroughly blended.
- Season with salt and pepper.
- Drizzle dressing over salad and serve immediately.
