Ingredients
- 1 pound sweet or possibly warm Italian sausage
- 1 sm. onion
- 1 tbsp. extra virgin olive oil
- 1 can crushed tomatoes
- Salt & pepper
- 1 c. yellow cornmeal
- 1 c. grated Parmesan cheese
Instructions
- Brown sausage and onion in oil over medium heat.
- Add in tomatoes and seasonings.
- Simmer 1 hour, stirring occasionally.
- Bring 1 1/2 qts of salted water to a boil.
- Add in cornmeal slowly into water, stirring constantly, to prevent lumping.
- Cook over low heat till cornmeal leaves sides of pan.
- Remove from heat.
- Add in 1/2 c. cheese.
- Place half of the cornmeal on large platter.
- Pour 1/2 of sausage mix over cornmeal.
- Sprinkle remaining cheese.
- Repeat layers and serve at once.
