Plums with Cider Sauce

Ingredients

  • 2 Tbs. unsalted butter
  • 4 large plums
  • pitted and sliced (4 cups)
  • 1/4 cup light brown sugar
  • 1/2 tsp. ground cinnamon
  • 3/4 cup apple cider
  • 4 slices nonfat pound cake
  • Vanilla ice cream
  • 4 tsp. chopped candied ginger

Instructions

  1. Melt butter in large skillet over medium-high heat.
  2. Add plums, and saute 5 minutes, or until softened, stirring halfway through.
  3. Sprinkle with sugar and cinnamon, and reduce heat to medium.
  4. Stir in apple cider, and simmer 4 to 5 minutes, or until cider is syrupy, scraping up any brown bits from bottom of pan.
  5. Meanwhile, toast pound cake in toaster oven until browned.
  6. Place 1 slice pound cake on each plate.
  7. Spoon plums and sauce over cake, top with ice cream, and sprinkle with candied ginger.
