Ingredients
- 1 kg salmon fillet
- 3 tbsp brown sugar
- 1 tsp sea salt
- 1 pinch ground black pepper
- 1 zest of lime (optional)
- 1 tbsp lime juice
Instructions
- Soak a cedar plank in cold water for at least one hour , longer is better!
- Remove any pin bones from salmon, make small incisions in flesh, you can remove skin if you wish.
- Mix sugar, salt & pepper (and lime zest if using) together, sprinkle over salmon, wrap in cling film for 30 -45 minutes.
- Preheat oven to 190c , when hot place plank in oven , on a baking tray, for 5 minutes.
- Remove salmon from cling film and place ,skin side down,on plank, drizzle with any liquid, sprinkle on lime juice.
- Place in oven for 25-30 minutes until cooked, should be slightly pink in the middle.
- Serve with fried potatoes and peas or green salad.
