Pistachio 5-Spice Cookies

Ingredients

  • 34 cup pistachio nut
  • shelled and skinned
  • 14 cup water
  • 3 tablespoons canola oil
  • 23 cup brown rice syrup or 23 cup honey
  • 1 cup brown rice flour
  • 1 cup amaranth flour
  • 12 teaspoon baking powder
  • 12 teaspoon baking soda
  • 1 teaspoon Chinese five spice powder

Instructions

  1. Preheat oven to 350 degrees.
  2. In a blender, grind nuts to a powder and put in a small bowl.
  3. Add water, oil, and syrup.
  4. Mix well.
  5. In a large bowl, whisk together flour, baking powder, baking soda and five-spice powder.
  6. Stir in nut mixture to form a dough.
  7. Form 1o balls and bake on ungreased cookie sheets for 8-10 minutes, or until lightly browned.
  8. Makes about 3 dozen cookies.
