Ingredients
- 1 (20 ounce.) can pineapple tidbits or possibly crushed
- drain and reserve
- 2 tbsp. cornstarch
- 2 c. sliced
- cooked beets or possibly 1 pound can
- liquid removed and coarsely minced (save liquid)
- 3/4 teaspoon salt
- 2 tbsp. lemon juice
- 2 tbsp. undiluted frzn orange juice concentrate
- thawed
- 1/4 honey
- 1 tbsp. butter
Instructions
- Combine 2 Tbsp.
- pineapple juice with cornstarch and mix till smooth.
- Stir in 3/4 c. beet juice, half the salt, and next 3 ingredients.
- Cook over low heat, stirring till thickened.
- Add in butter and stir till melted.
- Sprinkle the rest of the salt on beats.
- Mix in pineapple and beets and heat through.
- Serve at once.
- Serves 6 to 8.
