Ingredients
- 2 lbs. fresh beans
- 1 3/4 c. white vinegar
- 1 1/2 c. water
- 4 teaspoon salt
- 3/4 c. sugar
- 1 tbsp. mustard seed
- 1 tbsp. whole black pepper
- 1 (3 inch) cinnamon stick
- 2 cloves garlic
- split
- 3 med. onions (sliced or possibly minced)
Instructions
- Wash, trim and cut beans into 2 inch diagonal pcs.
- Cook covered in boiling salted water till tender.
- Drain.
- Combine vinegar and next 3 ingredients.
- Add in garlic and spices tied in cheesecloth bag.
- Heat to boiling.
- Add in onions and beans to vinegar solution.
- Bring to boil.
- Simmer 15 min.
- Remove spice bag.
- Continue simmering while packing in jars.
- Make sure solution covers jars 1/2 inch from top.
- Put in a warm bath for 5 min.
- Yields 3 pints.
