Pesto Lasagna Roll-Ups

Ingredients

  • 8 uncooked dried lasagna noodles
  • 4 cups pasta sauce
  • 1 1/2 cups ricotta cheese
  • 1/2 cup prepared pesto with basil
  • 1 Land O Lakes Egg
  • beaten
  • 1 1/2 cups fresh mushrooms
  • chopped
  • 2 cups shredded mozzarella cheese

Instructions

  1. Heat oven to 350F.
  2. Cook lasagna noodles according to package directions.
  3. Drain.
  4. Spread 2 cups pasta sauce onto bottom of greased 13x9-inch baking dish.
  5. Combine ricotta cheese, pesto and egg in bowl; mix well.
  6. Place lasagna noodles onto waxed paper.
  7. Spread 3 tablespoons pesto mixture along each lasagna noodle.
  8. Top each with about 2 tablespoons mushrooms and 2 tablespoons mozzarella cheese.
  9. Carefully roll up.
  10. Place over pasta sauce, seam-side down.
  11. Pour remaining sauce over lasagna roll-ups; sprinkle with remaining mozzarella cheese.
  12. Cover with aluminum foil.
  13. Bake 20 minutes.
  14. Uncover; continue baking 10-15 minutes or until cheese is melted and light golden brown.
