Penne Pasta with Roasted Red Peppers

Ingredients

  • 1 pound Penne Pasta
  • 2 Tablespoons Olive Oil
  • 5 ounces
  • weight Roasted Red Peppers
  • Sliced
  • 3 cloves Garlic
  • Minced
  • 1/4 cups Fresh Basil
  • Chopped Or Chiffonade
  • 1 cup Grated Parmesan Cheese

Instructions

  1. Cook the pasta in boiling water; drain and set aside.
  2. Heat the olive oil in a large skillet.
  3. Add the red peppers and garlic and saute over medium heat for 3 to 5 minutes.
  4. Add in the pasta and basil and toss in the red-pepper-infused oil.
  5. Sprinkle with salt and pepper to taste.
  6. Serve topped with parmesan cheese.
