Peas, Mushrooms and Thyme

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion
  • diced (1/2 cup)
  • 1 cup sliced fresh mushrooms
  • 1 (16 ounce) bagfrozen garden peas
  • 14 teaspoon coarse salt
  • 18 teaspoon pepper
  • 1 teaspoon chopped fresh thyme leaves or 14 teaspoon dried thyme leaves

Instructions

  1. In a large skillet, heat oil over medium heat.
  2. Add mushrooms and cook 2 minutes, stir occasionally.
  3. Add onions to mushrooms in skillet; cook about 3 more minutes.
  4. Stir occasionally.
  5. Stir in peas and cook 3-4 minutes until peas are tender.
  6. Stir occasionally.
  7. Sprinkle with salt, pepper, and thyme.
  8. Place in serving dish and garnish with fresh thyme.
  9. Serve immediately.
