Peanut Butter Honey Truffles

Ingredients

  • 1/4 cups Oats
  • 1/2 cups Natural Unsweetened Peanut Butter
  • 1/4 cups Honey
  • 1/2 teaspoons Vanilla
  • 1 pinch Salt (if Your Peanut Butter Has Salt
  • Omit)
  • 3 Tablespoons Dried
  • Shredded Coconut

Instructions

  1. Pulse the oats in a blender for 30-45 seconds till they become a powdery flour.
  2. In a mixing bowl, stir together peanut butter, honey, vanilla, salt and oat flour.
  3. Roll the peanut butter mixture into 1-inch balls.
  4. Put the shredded coconut in a shallow bowl.
  5. Roll each ball in the dried coconut to coat.
  6. Place truffles on a tray and when you are done put the tray in the refrigerator.
  7. Chill for at least 30 minutes.
  8. Serve cold.
  9. Store truffles in the refrigerator.
