Ingredients
- 1/4 cups Oats
- 1/2 cups Natural Unsweetened Peanut Butter
- 1/4 cups Honey
- 1/2 teaspoons Vanilla
- 1 pinch Salt (if Your Peanut Butter Has Salt
- Omit)
- 3 Tablespoons Dried
- Shredded Coconut
Instructions
- Pulse the oats in a blender for 30-45 seconds till they become a powdery flour.
- In a mixing bowl, stir together peanut butter, honey, vanilla, salt and oat flour.
- Roll the peanut butter mixture into 1-inch balls.
- Put the shredded coconut in a shallow bowl.
- Roll each ball in the dried coconut to coat.
- Place truffles on a tray and when you are done put the tray in the refrigerator.
- Chill for at least 30 minutes.
- Serve cold.
- Store truffles in the refrigerator.
