Peach-Glazed Filet Mignon

Ingredients

  • 2 filet mignon (5 oz. each)
  • 1/8 tsp pepper
  • 1/4 tsp salt
  • 1 tsp canola oil
  • 1/4 cup peach preserves
  • 2 tbsp chicken broth
  • 1 tbsp balsamic vinegar
  • 2 tsp fresh cilantro (thinly sliced/chopped up)
  • 3/4 tsp ground ancho chili pepper
  • 1 garlic clove
  • minced

Instructions

  1. Sprinkle beef with salt and pepper.
  2. In a large skillet, cook fillets over medium heat for 5 to 8 minutes on each side or until meat reaches desired doneness (medium-rare, a meat thermometer should read 145 degrees ; medium, 160 degrees ; well-done, 170 degrees ).
  3. In a small bowl combine the remaining ingredients; pour over the fillets.
  4. Cook for 1 to 2 minutes longer or until glaze is heated through.
