Ingredients

  • 1 1/2 cup cooked whole grain pasta (whichever type is your favorite. .. I like thin spaghetti for this)
  • 2 eggs
  • 1 cup firmly packed fresh chopped spinach
  • 1/4 cup diced tomatoes (fresh or canned... I like canned diced tomatoes with green chilies... for the spicy flavor)
  • 1/2 tsp minced garlic
  • 2 tbsp light olive oil
  • divided
  • 1 tbsp grated parmesan cheese
  • 1/4 tsp red pepper flake (optional. .. but I like mine spicy)
  • 1 dash (or more) of your favorite hot sauce (again.... optional)

Instructions

  1. what do you do with that left over extra pasta?
  2. why... you have it for breakfast, of course.
  3. ::laughs::
  4. heat a small skillet over medium heat and add half of the olive oil.
  5. when oil is warm... add to it your minced garlic.
  6. let it sautee for just a moment to flavor the oil... do not let it get brown.
  7. now add in your spaghetti and toss around to warm through.
  8. add your eggs and stir continuously.
  9. before eggs are fully cooked... drop in your spinach and add your red pepper flake and salt and pepper.
  10. now add in your tomatoes and give everything a good mixing.
  11. to plate it up.... put in a bowl... drizzle the other half of olive oil over pasta... sprinkle on your parmesan cheese.
  12. .. and splash on your hot sauce.
  13. give everything a good toss... and enjoy!
