Ingredients
- 500 g spiral shaped pasta
- cooked and cooled
- 1 red capsicum
- seeded and chopped (bell pepper)
- 1 purple onion
- chopped
- 12 cup pine nuts
- toasted
- 13 cup sun-dried tomato
- chopped
- 14 cup fresh basil or 14 cup fresh parsley
- chopped
- 1 ear of corn
- corn removed from cob (can use 1/4 cup tinned corn instead)
- 14 cup lemon juice
- 14 cup light olive oil
- 1 tablespoon brown sugar
- salt and pepper
- to taste
Instructions
- Combine salad ingredients, mix well.
- In another bowl, whisk together all of the dressing ingredients.
- Toss the dressing through the salad and serve.
