Paprika & Mushroom Pork Chops

Ingredients

  • 1 tbsp vegetable oil
  • 4 each pork chops
  • 1 tbsp butter
  • 1 each medium onion
  • 8 oz Mushrooms
  • 1 tbsp tomato paste
  • 1 tbsp all-purpose flour
  • 1 tbsp paprika
  • 1 tsp dried dill
  • 1 cup beef stock
  • 1/2 cup sour cream
  • 2 tbsp fresh dill (optional)

Instructions

  1. Heat oil in med-high pan
  2. Season pork chops with salt and pepper to taste
  3. Saute chops until cooked through, turning as required.
  4. Anywhere from 2-6 minutes a side depending on thickness
  5. Slice onion and mushrooms while chops cook
  6. Remove cooked chops and set aside.
  7. Cover with foil and let rest while you finish the sauce.
  8. Reduce pan to medium heat, Melt butter in pan, add onions, saute until tender, about 5 minutes
  9. Add mushrooms, continue cooking until tender, about 5 minutes
  10. Add tomato paste, flour, paprika, dried dill, and salt and pepper to taste
  11. Stir in tomato paste, flour, dill, paprika, 15 seconds
  12. Add stock and deglaze pan
  13. Simmer until sauce thickens
  14. Remove from heat, stir in sour cream and fresh dill (of using)
