Ingredients
- 1 tbsp vegetable oil
- 4 each pork chops
- 1 tbsp butter
- 1 each medium onion
- 8 oz Mushrooms
- 1 tbsp tomato paste
- 1 tbsp all-purpose flour
- 1 tbsp paprika
- 1 tsp dried dill
- 1 cup beef stock
- 1/2 cup sour cream
- 2 tbsp fresh dill (optional)
Instructions
- Heat oil in med-high pan
- Season pork chops with salt and pepper to taste
- Saute chops until cooked through, turning as required.
- Anywhere from 2-6 minutes a side depending on thickness
- Slice onion and mushrooms while chops cook
- Remove cooked chops and set aside.
- Cover with foil and let rest while you finish the sauce.
- Reduce pan to medium heat, Melt butter in pan, add onions, saute until tender, about 5 minutes
- Add mushrooms, continue cooking until tender, about 5 minutes
- Add tomato paste, flour, paprika, dried dill, and salt and pepper to taste
- Stir in tomato paste, flour, dill, paprika, 15 seconds
- Add stock and deglaze pan
- Simmer until sauce thickens
- Remove from heat, stir in sour cream and fresh dill (of using)
