Paleo Fried Rice Recipe

Ingredients

  • 1 head of cauliflower
  • 3 slices of bacon
  • 2 egg whites and 1 egg
  • 1 small onion
  • finely diced
  • 1 carrot
  • finely diced
  • 1 red pepper
  • finely diced
  • 1 cup broccoli florets
  • finely chopped
  • 1 tablespoon coconut aminos (paleo substitute for soy sauce)
  • 1/4 teaspoon fish sauce
  • 1 tablespoon ghee (or other oil of choice)
  • Salt and pepper to taste

Instructions

  1. Chop cauliflower into florets and pulverize in a food processor until it resembles rice.
  2. Heat a large skillet on medium heat.
  3. Add ghee and cauliflower; cook for 5 minutes.
  4. Add remaining vegetables, and cook until soft, another 7-10 minutes.
  5. While cauliflower is cooking, heat a separate skillet on medium heat, and add bacon and eggs.
  6. When they are done, set aside and dice.
  7. When cauliflower and vegetables are done cooking, add coconut aminos and fish sauce.
  8. Taste and adjust seasonings accordingly.
  9. Add bacon and eggs.
  10. Stir until combined.
  11. Then, dig in!
