Ingredients
- 3 1/2 tsp active dry yeast
- 1 3/4 cup water
- heated to 110 degrees f.
- 1 tbsp granulated sugar
- 4 cup all-purpose flour
- 1 cup bread flour
- 1 tbsp salt
- 2 1/2 tbsp olive oil
- extra virgin
- 5 tbsp olive oil
- extra virgin
- 1/2 cup red onion
- sliced thin
- 5 clove garlic
- you can use 3 if you feel the 5 will be too strong in flavor.
- 1/2 tbsp sea salt
- 1/2 cup grated parmesan cheese
Instructions
- In a bowl add your yeast, sugar and heated water, stir.
- Set aside until foamy.
- In a large mixing bowl with dough hook attachments, add flours, salt and extra virgin olive oil.
- Start mixing on lowest speed adding yeast mixture in slowly.
- Mix on low for 10 minutes.
- If doing by hand, turn dough out on lightly floured surface and knead 10 minutes.
- In a large bowl, lightly oil it and place in dough rolling it around to coat all sides in oil.
- Cover in plastic wrap and rest in warm place for 30 minutes.
- Punch dough down and cover and rest another 30 minutes.
- Lightly oil a 9x13 baking tray and stretch dough out on tray.
- Using your knuckle, make dimple marks or indents over entire dough.
- This gives the foccacia it's famous look.
- For the topping , mince the garlic.
- Mix with salt and oil.
- Spread over dough.
- Place sliced onions over dough then sprinkle grated cheese on top.
- Cover dough with wrap again and rest 15 minutes.
- In a preheated oven, 450F., bake foccacia for 20 minutes.
- Cover with tin foil, lightly, and bake another 10.
- Let bread cool and cut into squares.
