Ingredients
- 3 whole bananas well ripened
- 1/2 cup canola oil
- 1 cup sugar
- 2 large eggs
- 2 cups flour
- all-purpose
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 cup pineapple crushed
- undrained
- 1/2 cup walnuts chopped
Instructions
- Mash the bananas and set aside.
- Cream sugar and oil well.
- Add eggs and beat well.
- Combine the flour, baking powder, baking soda, cinnamon and salt.
- Add to the creamed mixture, alternately with the crushed pineapple;just until moistened.
- Stir in mashed bananas and walnuts until blended.
- Pour into a 9x5x3 inch greased loaf pan.
- Bake in a 350F (180C).
- oven for 1 hour or until toothpick comes out clean.
- Cool 10 minutes in the pan before removing to a wire rack to cool completely.
