Oil-free Marinated Mushrooms

Ingredients

  • 1/2 pack Shimeji mushrooms
  • 1/2 to 1 small pack Enoki mushrooms
  • 2 Shiitake mushrooms
  • 1/2 pack Hen-of-the-woods
  • 1/6 Onion
  • 4 cm Carrot
  • 1 tbsp White wine
  • 2 1/2 tbsp Lemon juice
  • 1 tsp White wine vinegar (or regular vinegar)
  • 1/4 tsp Sugar
  • 1 Salt and pepper
  • 1 Powdered parsley (optional)

Instructions

  1. Chop mushrooms into bite-sized pieces.
  2. Julienne the onion and carrot.
  3. Heat a frying pan and dry fry the mushrooms for 3 minutes over medium heat.
  4. Mix in the onion and carrot.
  5. Add white wine.
  6. When the alcohol has evaporated, cover the pan and steam for 2 minutes over low heat.
  7. Transfer into a bowl and set aside to cool.
  8. Combine with condiments and chill in the fridge.
  9. Dish it up and sprinkle on a pinch of dried parsley.
