Oatmeal Raisin Cookie Dough Truffles

Ingredients

  • 3/4 cups Unsalted Cashews
  • 1/4 cups Old Fashioned Rolled Oats
  • 13 cups Raisins Plus 2 Tablespoons
  • Divided
  • 3 whole Pitted Medjool Dates
  • 1 teaspoon Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 1/4 teaspoons Kosher Salt

Instructions

  1. In the bowl of a food processor, combine the cashews and rolled oats.
  2. Process until finely crumbled; mixture will resemble coarsely ground flour.
  3. Remove from the food processor bowl and set aside.
  4. Place 1/3 cup raisins, dates, cinnamon, vanilla extract, and salt into the food processor bowl, and blend until a thick paste forms.
  5. Add the ground nut and oat mixture to the raisin and date paste and process until the mixture comes together to form a crumbly dough.
  6. Remove mixture from the food processor and place in a mixing bowl.
  7. Knead in the remaining 2 tablespoons raisins until evenly distributed.
  8. Form mixture into a large ball and refrigerate for about 5-10 minutes.
  9. When the dough has chilled for a bit, take it out of the fridge and roll into 10 balls.
  10. Store in an airtight container in the refrigerator.
