Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup uncooked quick-cooking oats
- 3/4 cup sugar
- 3/4 cup sweetened flaked coconut
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup Land O Lakes Butter
- melted
- 3 medium (1 1/2 cups) carrots
- peeled
- shredded
- 1 large (1 1/2 cups) apple
- peeled
- chopped
- 3 Land O Lakes Eggs
- slightly beaten
- Land O Lakes Light Butter with Canola Oil
Instructions
- Heat oven to 375F.
- Lightly grease 12 muffin pan cups; set aside.
- Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.
- Combine butter, carrots, apple and eggs in another bowl; mix well.
- Add butter mixture to flour mixture; stir just until moistened.
- Spoon batter evenly into prepared pan.
- Bake 18-23 minutes or until toothpick inserted in center comes out clean.
- Serve warm with Light Butter with Canola Oil.
