Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup uncooked quick-cooking oats
  • 3/4 cup sugar
  • 3/4 cup sweetened flaked coconut
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup Land O Lakes Butter
  • melted
  • 3 medium (1 1/2 cups) carrots
  • peeled
  • shredded
  • 1 large (1 1/2 cups) apple
  • peeled
  • chopped
  • 3 Land O Lakes Eggs
  • slightly beaten
  • Land O Lakes Light Butter with Canola Oil

Instructions

  1. Heat oven to 375F.
  2. Lightly grease 12 muffin pan cups; set aside.
  3. Combine flour, oats, sugar, coconut, cinnamon, baking soda and salt in bowl; mix well.
  4. Combine butter, carrots, apple and eggs in another bowl; mix well.
  5. Add butter mixture to flour mixture; stir just until moistened.
  6. Spoon batter evenly into prepared pan.
  7. Bake 18-23 minutes or until toothpick inserted in center comes out clean.
  8. Serve warm with Light Butter with Canola Oil.
