Ingredients

  • 2 zucchini
  • spiralized or 2 cut into thin strips to resemble noodles
  • 1 cup carrot
  • pulp
  • 1 cup spinach
  • 3 stalks celery
  • 4 cups hot water (From the tap
  • or heated but not boiling)
  • 1 cup walnuts
  • 2 teaspoons garlic
  • minced
  • 1 12 teaspoons poultry seasoning
  • 2 tablespoons Braggs liquid aminos or 2 tablespoons soy sauce or 2 tablespoons tamari
  • 1 teaspoon black pepper
  • ground
  • 1 teaspoon onion powder

Instructions

  1. Spiralize zucchini and give it a couple of chops to break the 'noodles' into shorter lengths.
  2. If you don't have a spiralizer use a vegetable peeler to cut thin strips.
  3. Set the zucchinis, carrot pulp, spinach and celery aside.
  4. In a Vitamix or other blender, load in the walnuts, garlic, poultry seasoning, Aminos, black pepper, onion powder, and water.
  5. Spin it until it is a a well combined, creamy looking soup.
  6. This is the broth for the soup; taste and adjust the flavorings.
  7. With the Vitamix or blender running on low, add the celery, carrot pulp, spinach.
  8. Spin it only until well combined.
  9. Put the zucchini 'noodles' in the serving bowls and add the soup.
  10. Stir to combine.
  11. Serve with your favorite crackers and Enjoy!
