No Egg, Milk, or Flour! Rice Flour Banana Cake

Ingredients

  • 150 grams Rice flour
  • 2 bananas Banana
  • 50 grams Sugar (or raw cane sugar)
  • 40 grams Olive oil
  • 150 ml Soy milk
  • 7 grams Baking powder

Instructions

  1. Put 1.5 of the bananas in a bowl and mash.
  2. The leftover half of a banana will be used for decoration, so cut it into slices.
  3. Preheat your oven to 180C.
  4. Add the sugar to the mashed bananas and mix well.
  5. Add in the baking powder and mix well.
  6. Then add in the olive oil and mix once more.
  7. Next, add in the rice flour and soy milk and mix well.
  8. Pour the dough into a parchment lined pan and top with the thinly sliced bananas.
  9. Bake at 180C for 45 minutes.
  10. When you pierce it with a bamboo skewer and it comes out clean, it's done.
  11. If you want it lighter, cover it with aluminum foil and bake for 5-10 minutes.
