In a large skillet or pot cook onion ,garlic, & celery, in shortening or oil, add rice and brown lightly, add the rest of the ingredients.
Cook covered over low heat check after 15 minutes add water if needed cook until rice is tender and liquid is absorbed.
Add some or all of the tomato paste with the rest of ingredients for a stronger tomato flavor, Green Chile can be added for additional spiciness *~~~~ENJOY~~~~*
