My "stuffed" Peppers Casserole
Ingredients
- 2 large green peppers
- capped
- seeded
- and cut in fourths
- 1 12 lbs ground beef (I use 80% lean
- it has better flavor)
- 2 tablespoons extra virgin olive oil
- 1 12 cups raw cauliflower rice
- salt & pepper (plus optional seasonings of your choice)
- 1 (10 1/2 ounce) can condensed tomato soup
- 1 (28 ounce) can diced tomatoes (any variety) or 1 (28 ounce) can crushed tomatoes (any variety)
- 8 slices bacon (approx)
- pepper
- caps
