Ingredients
- 2 tbsp olive oil
- 500 grams pork
- fillet or tenderloin
- 1/2 large Onion sliced chunky
- 1 cup Tomatoe sauce / ketchup
- 180 can pineapple chunks and pineapple juice
- 4 tbsp Heaped White Sugar
- 3 tbsp Rice wine vinegar
- 1 tbsp malt vinegar
- 1 tbsp lemon juice
- 2 tsp corn flour / starch
Instructions
- Fry the pork until near cooked
- In a large saucepan add the tomatoe ketchup put on low heat when boiling
- Add onions and meat and sugar and pineapple and juice
- Add the malt vinegar and the rice wine and lemon juice stir in and simmer when boiled for 20 mins
- Add corn flour in a little water stir and add to sweet & sour stir to thicken .
- Serve on a bed of Long grain rice or chips on the side
