Ingredients

  • 1 12 cups sliced mushrooms
  • 34 cup chopped onion
  • 1 tablespoon butter or 1 tablespoon olive oil
  • 12 cup sour cream
  • 1 12 lbs lean ground beef
  • 2 eggs
  • 12 cup heavy cream or 12 cup half-and-half
  • 1 teaspoon salt
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream
  • 1 teaspoon prepared horseradish
  • 13 teaspoon salt
  • 12 teaspoon paprika
  • 12 teaspoon poppy seed

Instructions

  1. Preheat oven to 350 degrees.
  2. FILLING:.
  3. Saute mushrooms and onion in butter.
  4. Remove from heat and stir in sour cream.
  5. Set aside.
  6. MAKE MEATLOAF:.
  7. Combine eggs, cream, ground beef, salt and Worcestershire sauce.
  8. Put 1/2 of the mixture into a loaf pan.
  9. Make a shallow trough down the center of the meat.
  10. Spoon mushroom filling into the trough.
  11. Shape remaining meat mixture on a piece of waxed paper to cover the meat loaf.
  12. Seal around all edges.
  13. Bake for 1 hour.
  14. Let stand 15 minutes before slicing.
  15. SOUR CREAM SAUCE::.
  16. Stir together the sour cream, horseradish, salt, paprika and poppy seeds.
  17. Heat over low heat until hot.
  18. Serve over sliced meatloaf.
