Ingredients
- 2 1/2 cups flour
- all-purpose
- 1 cup rolled oats quick cooking
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/4 teaspoon cloves
- 2 teaspoons lemon zest grated
- 1 cup brown sugar dark
- packed
- 3/4 cup butter
- 1 large eggs
- 1/2 cup applesauce unsweetened
- 1/2 cup honey
- 1 cup apples fresh
- peeled
- finely chopped
- 1 cup raisins
- seedless
- 1/2 cup oats
- quick cooking
Instructions
- Preheat oven to 300F (150C).
- In a medium bowl combine flour, oats, salt, soda, cinnamon, cloves and lemon zest.
- Mix well and set aside.
- Cream sugar and butter together in a large bowl using an electric mixer.
- Add egg, applesauce and honey and beat at medium speed until smooth.
- Add the flour mixture, fresh apple and raisins, and blend at low speed until just combined.
- Dough will be quite soft.
- Drop by rounded tablespoons onto ungreased baking sheets, 1 1/2 inches apart.
- If you wish, sprinkle cookies with oats.
- Bake 23 to 25 minutes or until bottoms are golden.
