Ingredients
- 2 cups lentils
- 2 tablespoons oil
- 2 medium onions
- 3 cloves
- 1 (14 ounce) can diced tomatoes
- drained
- 1 lb kielbasa
- 1 -2 teaspoon sugar
- 12 teaspoon pepper
- 1 bay leaf
- salt and pepper
- red wine or sherry wine
Instructions
- Put lentils in large pot and over with salted water.
- Boil, then cover and cook about 20 minutes (or until done).
- Reserve liquid if desired.
- Heat oil in large baking dish, stir in chopped onions and garlic.
- Cook until tender.
- Add canned tomatoes.
- Cut vegan sausage into 1/2 inch slices.
- Toss sausage with tomato mixture, add lentils, sugar, salt and pepper and bay leaf.
- Bake 350 degree oven about 30 minutes.
- Add reserved liquid or use 1 small can of V-8 or wine, sherry if dry.
