Mojo Royale

Ingredients

• 8 tarragon leaves
• plus 1 tarragon sprig for garnish
• 1/2 ounce chilled club soda
• Ice
• 1 1/2 ounces cachaca
• 3/4 ounce fresh lime juice
• 3/4 ounce Simple Syrup
• 2 ounces chilled dry sparkling wine
• 4 dashes of Angostura bitters

Instructions

1. In a shaker, muddle the tarragon leaves and soda.
2. Add ice, the cachaca, lime juice and syrup; shake.
3. Fine-strain into a wineglass.
4. Add the wine, bitters and sprig.
