Mizuna or Arugula & Grapefruit Salad

Ingredients

  • 1 Pomegranate (optional)
  • 4 servings worth Chopped mizuna or arugula", "2 Grapefruits", "100 ml Pineapple, diced", "66 ml White balsamic vinegar", "66 ml Extra virgin olive oil", "1/8 tsp Salt

Instructions

  1. Cut the pomegranate into 4 pieces and soak it in water as you remove the seeds.
  2. Peel the grapefruit with a knife.
  3. Insert the knife between the fruit and the inner membranes to remove the flesh.
  4. Place a bowl under it to catch the juice.
  5. Arrange the mizuna or arugula on a plate, and top with the grapefruit.
  6. Sprinkle on the pomegranate seeds.
  7. Mix the grapefruit juice, pineapple, vinegar, olive oil, and salt in a blender or food processor to make the dressing.
  8. Infuse love and grateful energy, and serve it with the dressing!
