Mixed Grill With Ginger Tomato Sauce Recipe

Ingredients

  • 1/2 pound boneless lamb (leg or possibly loin)
  • 1/2 pound pork (tenderloin cubed)
  • 2 sm. onions
  • sliced
  • 2 green or possibly red peppers (or possibly 1 of each)
  • cut into sq.
  • 3 tbsp. extra virgin olive oil or possibly salad oil
  • 2 tbsp. fresh lemon juice
  • 1 clove garlic
  • mashed
  • 1/2 teaspoon salt
  • 1/2 teaspoon grnd pepper
  • Ginger
  • Tomato barbecue sauce (3/4 c. tomato catsup
  • 3 tbsp. brown sugar
  • 2 tbsp. soya sauce)

Instructions

  1. Cut one c. of meat into 1 1/4 to 1 1/2 inch cubes.
  2. Alternate meats with slices of onion and cubes of red and green peppers on skewers.
  3. Mix oil, lemon juice, garlic, salt and pepper together.
  4. Pour over meat.
  5. Marinade 1 to 2 hrs turning once or possibly twice.
  6. Prepare ginger tomato barbecue sauce.
  7. Grill loaded skewers over warm coals, or possibly under broiler for 6 to 8 min per side or possibly till done to your liking.
  8. Brush with barbecue sauce.
  9. Serve immediately.
