Ingredients
- 1/2 head iceberg lettuce
- shredded
- 1/2 head romaine lettuce
- torn
- 1/2 bag spinach
- thick stems removed
- 1 sm. head Boston lettuce
- 2 c. celery
- thinly sliced
- 3 tbsp. chopped parsley
- 6 scallions
- minced
- 2 c. mandarin oranges
- liquid removed and chilled
- 3/4 c. toasted sliced almonds
Instructions
- Toss everything up to and including scallions in large bowl.
- Can be prepared ahead at this point.
- Just before serving, add in oranges and almonds.
- Toss with dressing and serve.
- Serves 6-8.
