MINUTE RICE Vegetarian Chili

Ingredients

  • 1 each: onion
  • clove garlic
  • red pepper and celery
  • chopped
  • 1 Tbsp. oil
  • 1 (28 oz/796 mL) can stewed tomatoes
  • 1 (14 oz/398 mL) can kidney beans
  • drained
  • 1 (12 oz/341 mL) can whole kernel corn
  • 2 Tbsp. chili powder
  • 1-1/4 cups Minute Rice Brand Rice

Instructions

  1. COOK onion, garlic, pepper and celery in oil until tender crisp.
  2. ADD tomatoes, kidney beans, corn and chili powder.
  3. Bring to a boil.
  4. STIR in rice.
  5. Cover, remove from heat and let stand 5 minutes.
