Ingredients
- 2 cups sugar
- 12 cup vegetable oil
- 2 teaspoons vanilla
- 34 teaspoon mint extract
- 4 ounces unsweetened baking chocolate
- melted and cooled
- 4 eggs
- 2 cups flour
- 2 teaspoons baking powder
- 12 teaspoon salt
- 6 ounces chocolate chips (about half a bag)
- 1 cup powdered sugar
Instructions
- Mix sugar, oil, vanilla, mint extract and chocolate in a large bowl.
- Mix eggs in, one at a time.
- Stir in the flour, baking powder and salt.
- Add chocolate chips.
- Cover and refrigerate for 3 hours.
- Heat oven to 350 degrees.
- Grease cookie sheet with shortening.
- Shape dough into balls and roll in powdered sugar to coat.
- Place 2 inches apart on cookie sheet
- Bake 10-12 minutes.
- Cool and serve.
