Mini Cheese Quiche

Ingredients

  • 1/2 packages (16 Oz. Package) Phyllo Dough
  • 2 whole Eggs
  • 1 cup Whipping Cream
  • 1 pinch Salt
  • 1/2 teaspoons Nutmeg
  • 1 pinch Pepper
  • 6 ounces
  • weight Swiss Cheese
  • Shredded

Instructions

  1. Preheat oven to 400 degrees.
  2. Thaw out one roll of phyllo dough.
  3. Beat eggs, add whipping cream, salt, nutmeg and pepper.
  4. Beat until fluffy.
  5. Using 4 sheets of the phyllo dough at a time, use a biscuit cutter or a cup to cut round circles (4 sheets thick).
  6. Press the circles into a mini-muffin pan.
  7. Cut a small cube of Swiss cheese and place in the bottom of each shell you have created.
  8. Fill to the top of each shell with whipped mixture.
  9. Bake for 15-20 minutes or until golden brown.
  10. This will fill mini-muffin pans.
