Microwaved Cream Cheese & Fruit Cake

Ingredients

  • 30 grams Cream cheese
  • 3 grams Sugar
  • 1/4 Apple (or about 40g of a different fruit)
  • 1 Egg
  • 20 grams Sugar
  • 20 grams Cake flour

Instructions

  1. Soften the cream cheese, add 3g of sugar and mix.
  2. Add the minced fruit and mix.
  3. Put the egg and 20g of sugar into a bowl and whip over a double boiler until stiff peaks form.
  4. Add the cake flour into Step 2 and fold gently to maintain an airy texture.
  5. Pour the batter into a microwavable container, add the mixture from Step 1, then cover with a lid and microwave for about 1 minute 50 seconds at 600W.
