Microwave Quick Coffee Cake Recipe

Ingredients

• 2 c. biscuit mix
• 2 tbsp. sugar
• 1 carton (8 ounce.) lowfat sour cream
• 1 egg
• 1 tbsp. sugar
• 1/2 teaspoon cinnamon

Instructions

1. Combine all coffee cake ingredients except 1 tbsp.
2. sugar and cinnamon.
3. In medium mixing bowl mix well.
4. Divide dough in half, spread half in 9 inch round glass baking dish.
5. Sprinkle filling over top.
6. Drop remaining dough by teaspoonfuls over filling.
7. Filling will show through.
8. Combine 1 tbsp.
9. sugar and cinnamon, sprinkle on top.
10. Microwave 10 min on medium simmer.
11. Microwave 4 to 6 min on high or possibly till toothpick inserted near center comes out clean.
12. Let stand 2 min.
