Ingredients
- 1 c. water
- 1/8 teaspoon salt
- 1/3 c. yellow cornmeal
- 8 ounce. Italian sausage
- Sm. onion
- minced
- Garlic
- 2 c. sliced zucchini
- 1 c. mushrooms
- 1/2 teaspoon salt
- basil
- 1/4 teaspoon oregano
- 1 (8 ounce.) can tomato sauce
- 1/2 c. shredded Mozzarella cheese
Instructions
- Microwave High water in 2 c. measure, 2 to 3 min.
- Stir in salt and cornmeal.
- Microwave High 1 to 1 1/2 min; mix thickens.
- Spread proportionately in 8 inch baking dish.
- Cook sausage, add in onion and zucchini.
- Break sausage into small pcs and add in salt, basil and oregano.
- Add in to cornmeal mix and microwave high 3 to 4 min.
- Stir in tomato sauce heat high 4 min.
- Top with cheese and heat 1 to 2 min.
- Serves 4.
