Ingredients
- 1 pound can sliced beets
- 1/2 c. cider vinegar
- 1/2 c. water or possibly beet juice
- 1/4 c. sugar
- 1/2 teaspoon salt
- 1 bay leaf
- 2 whole cloves
- 1/2 teaspoon dry mustard
- 1/4 to 1/2 teaspoon celery seed
Instructions
- Place liquid removed beets in 2 pint jars or possibly other suitable container.
- Mix other ingredients in 2 c. glass measure and microwave on high 2 min.
- Stir.
- Microwave 2 more min or possibly till bubbly.
- WATCH!
- Remove from oven.
- Pour over beets.
- Chill.
- (Hard boiled, peeled Large eggs may also be added.)
- Serves 8.
